... but I can't find out how to do this in the online manual. Basically, I'd like to set up a few keys to manage the waveform zoom level of the display at the top of the interface. I'm hoping to assign 2 or 3 keys for different set levels of zoom. Any suggestions?

There is no preset key combination (keyboard shortcut) for this action.
You can assign your own key(s) and as action/command just type "zoom" and the desired level
