So I purchased a Mixtrack and it came with LE. Can I still upgrade to VDJ8? Because I heard it's going to be pretty amazing. If so, how? Thanks!

Yes, any LE version of VDJ that comes with hardware can be upgraded to Pro full.
If you go to the product page, there's an area towards the bottom where you can enter your LE serial number and get a discounted upgrade price. It won't matter if you buy now, because the update to version 8 will be free.
If you're talking about an LE version of VDJ 8, then I guess it will be available at some stage once version 8 is released.

See the tab just below where it says "Hello DJ Zibs!"? The one that says Download Center?
When 8 is released, that's where it'll be. The tab will (should) also be highlighted when there's anything new to download.

VirtualDJ LE is not normally eligible for free product updates unless the manufacturer has made special arrangements for this. You can upgrade to the full Pro though at a discount and get the latest version (And v8 and future updates when they are released in future.)
