I want a pair of speakers, size 15s on poles but are the poles universal fitting all speakers? Also what speakers can I get size 15s, powered with the amp built on the back for about £200-£600? thanks.

A license for VDJ would be a good start!

No!
Don't get Mackie Thumps - so many beginners make that mistake.
If you spend your cash on those, you'll be wanting to upgrade before you know it.
My suggestion would be a pair of QTX QRC15A. Cheap and cheerful yes, but they'll eat the Thumps for breakfast.

Well, even non beginners can make the same mistake ....
I regret it the next day. They are good for booth monitors or say for a keyboard player and only for very small gigs.

Speaker stands are usually 35mm, use power drive stands.

I got the thumps and they can handle what I dish out. Yes they do feel cheap.... but as long as you have a sub to go along with it you could rock out a mid size venue. But wouldn't recommend trying to use them with out having a sub cuz they clip easily.

What sub(s) would you recommend to go with the Mackie thumps speakers. Price range between $200 to $400.

None.
you are not going to find any subs in that price range that are worth anything at all.
Sorry to say that but it's true. Better to save your money up for a decent sub than throwing away $200 - $400 on subs you really can't use.
