Hi, have just purchased a new projector and am keen to start using the video option in virtual DJ. Can anyone tell me exactly how i go about setting this up. I have a macbook, vdj pro edition and a projector.

If your Macbook (most likely) didn't come with a mini-display to VGA adaptor, this is the first thing you'll need to buy from Mac Store or other electronic shop.
Once hooked up, start VDJ, open your system preference in Mac, choose display, to make sure it's being read (check arrangement and make sure you "DON'T choose mirror display")
On VDJ, open config, video tab, on tv output: select "your projector model" instead of window (mine shows VGA display because I use a video-selector/amplifier before my projectors)
