I was wondering if you could record analog sources the same way you record digital when recording your mix?

yes just put the channel to analog

When I do this it does not record the incoming audio.

I just tried it set channel 4 to analog hooked up an mp3 player pressed record in VDJ mixed away songs from mp3 player together with songs played in VDJ and everything got recorded
