Hi I'm considering buying a xdj-az and I'm wondering if the "stems shape waveform " show on the unit display and if i cut out the vocals will it dim out on the waveform

VDJ will send a Shapes-type waveform to the XDJ, but only once after calculation. It wont re-send any waveform data after that (would keep the USB traffic very high), so you will not get the waveforms on the XDJ changing "live" while you alter the Stems.

Is that something that could change in the future because I have a set of denon sc6000 and they do live updates ?

Denon screens is whole different story. They work like a screen skin, updated from VDJ.
The Pioneer screen is not drawn by VDJ. The device accepts HID data and the firmware is updating the screen with the given information..
If something like that was implemented, it would make the device lagging, so not a plan.
