I often work alongside saxophone players. It would be insane if the AI could identify and remove saxophone parts like it can a lead vocal!

That is an insane question ;)
I think you need to edit your music before you use it with your saxophone players.
Why not try any other program that makes stems and make your own edits or record your music in Vdj with some tweaking in the bleeding section.
