Even though I have the mic box checked OFF, any time I talk on the mic while recording a mix, I can still hear my voice on the mix playback.
I am using a Pioneer RST-1000 controller. Is there a setting on VDJ or the controller that I am missing?

There's no such thing as RST-1000. I assume you mean the DDJ-1000SRT?
Did you read the setup guide? That explains the mic routing.
Basically you need to turn the mic on/off using the switch on your controller.
