I have looked and looked in the user guide and cannot find out how to link or assign function keys (F1 F2 etc) to samples, I hear a sample playing when I hit the button just not the one I want played.

This is the bug report forum. Please use it only for reporting bugs, rather than general questions.
When you press one of the F keys, you should be able to see which sample is playing - either in the pad or list view. Simply drag a new sample to the pad which is being triggered by the key you're pressing.
