I create playlists with a specific song order in mind. As I create a lengthy playlist, occasionally I accidentally hit the Artist or Title heading and my playlist instantly gets borked. Is there any way to restore the order I had before i accidentally hit the Title or Artist heading? I know that if i'ts been saved, all I would have to do is reload it. but this is before it gets saved.

Unfortunately this is not possible. Clicking on one of the headings will permanently change the order of the files.
If you are creating a large new playlist, then saving it at regular intervals as you create it is recommended (E.g: After every 25 songs you add.)
