I just downloaded virtual DJ and i'm super new to djing. I want to mash up Gaia's Carnation and John Legend's All of me together just like this video @ 52:28 -55:00 https://youtu.be/RHdJL4-y918?t=52m26s . How do I do this and what should i read up on to familiarize myself with this software?

1) Search Google for "how to make mashups". There are thousands of results.
2) Read the User's Guide which was installed with VDJ.
My advice would be to look at using a DAW to create a mashup, rather than DJ software. It will allow you more control.
