Can I run the audio out of my RMX to an input of another mixer or is that too many mixers which could give me audio problems?

Yes it can be done if you really need to. Just keep a close eye on levels - don't overload the input of the second mixer.
As long as the devices in the chain are reasonably good quality, the amount of degradation (added hiss/hum) should be small.

As Groovin says, watch your levels, this is called gain staging. If you don't know what that involves, check this link.

I do this all the time from my Mixtrack Pro to my Mackie CFX12. I run several mic's, the Mixtrack, and other live sound or other Guest DJ's gear depending on what we are doing that night.
Gain staging should be knowledge that you have even if your not using a second mixer.
